WHITE CHRISTMAS RECIPE
It is almost Christmas ! Who’s ready for White Christmas this year
I have a White Christmas recipe which I haven’t really seen around at present but think it will make a comeback like most bakery food products do.
White Christmas is very easy to make. NO BAKING REQUIRED! The only thing needed is to melt some coconut oil, not to boil it though! You can melt the oil in the microwave or on a stovetop, whatever you have available

WHITE CHRISTMAS RECIPE – adjusted for the home bakers
You will need a slice tray that Dimensions/Size: 3.8cm (H) x 19.5cm (W) x 28.5cm (D). Line the tray with “silicone” paper/baking paper.
In one large mixing bowl (g= grams) weigh up the ingredients below and either using a spoon or your hand thoroughly mix the ingredients till they are evenly mixed together. (In Baking terms this would be group 1)
Group 1
75g Puffed Rice
135g Coconut – Desiccated
165g Milk Powder

235g Mixed Fruit (could be any dried fruits you like for example Sultanas, Currents, raisins, Glazed cherries, Dried apricot, Dried stone fruits Apricots, nectarine, peach, plums. Dried Citrus peels)
235g Icing Sugar
2g Mixed Spice
1g Ground Ginger
5g Vanilla Essence
Group 2
265g Copha (coconut oil)
Method
In a container/saucepan melt the fat, then once lukewarm pour over group 1 ingredients in the mixing bowl and mix through quickly and thoroughly.
Once mixed through, pour into the prepared slice tray and spread out evenly. Ensure that you press down slightly to compact the mixture down to ensure it will all stay together after chilling.
Put the tray into the refrigerator for a few hours, then remove and cut into fingers.
WHITE CHRISTMAS – For Commercial production
Prepare a double ended silicone paper lined baking tray (Swiss roll/slice tray)
Group 1
300g Puffed Rice
540g Coconut – Desiccated
660g Milk Powder
930g Mixed Fruit
930g Icing Sugar
10g Mixed Spice
5g Ground Ginger
20g Vanilla Essence
Method Blend Group 1 together thoroughly
Group 2
1050g EOI KREAMOLENE 35 or Copha (coconut oil)
Melt Group 2. When lukewarm mix thoroughly with group 1
Total 4445g
Method
Spread mix into the double-ended silicone paper-lined baking tray. Refrigerate for a couple of hours, then remove from fridge and cut into fingers
