Long Handle Bread Lame – Straight Blade
Name of the mystery tool
Long Handle Bread Lame – Straight Blade
What is a Long Handle Bread Lame – Straight Blade?
Scoring the dough with a bread lame allows you to control the rise of the bread, directing it where you want it to go. Improve appearance: Scoring the dough with a bread lame can create a decorative pattern on the bread’s surface, making it look more attractive and professional. A regular knife does not move as swiftly through the dough and drags. It’s also challenging to be precise with the cuts, as a knife blade is much longer and harder to maneuver. Make sure to score deep enough, from 1/4 inch to 1/2 inch deep, erring on the latter.
Since most lames only utilize one corner of the razor blade, you can rotate the blade and get full use out of all four corners. There’s no hard and fast rule about how often you should change the blade, but most bakers will swap blades out every five to 10 loaves to get the cleanest slash.
